ingredients:

1 small lettuce, leaves torn
60g walnuts
3 tsp brown sugar
2 tsp butter
80g feta, crumbled
1/2 tsp oregano
juice from 1/2 lemon
1 apple, diced
olive oil, salt, pepper
method:
Melt butter in a small pan.
Add walnuts, and sprinkle with some pepper and 2 tsp brown sugar.
Spread walnuts on a baking sheet and bake in oven at 230C for 5min (if no time, it's fine to skip this step but it does make the walnut coating crisp!)
In a small jar, combine lemon juice (ca. 3 tbsp), the remaining 1 tsp brown sugar, and 1 tbsp olive oil for the dressing.
Combine all ingredients in a salad bowl and toss with the dressing.
