ingredients:
(serves 2)
250g mushrooms
For the Cajun Mix:
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp oregano
1/2 tsp thyme
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp Cayenne pepper
1/4 tsp curcuma
For the Salad:
1 small can corn, 150g
1 small can kidney beans, 125g
10 cherry tomatoes, halved
1 shallot, finely diced
1/2 lettuce, shredded
* Optional: 1/2 avocado
For the Dressing:
juice from 1/2 lime
2 tsp sugar
4 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
method:
Combine cajun seasoning.
Coat mushrooms in olive oil and then in the seasoning. Grill or fry on high heat for 5 min.
Meanwhile, combine salad ingredients in a bowl.
Combine dressing in a jar, mix well, and coat salad in it.
Serve with mushrooms on top, and sliced avocado if using.
