1/3 cup brown sugar
1/4 cup caster sugar
120g butter, room temp
1 1/3 cup flour
1 tsp baking powder
1 tsp vanilla sugar
1/2 tsp salt
1 egg
1 tsp cinnamon
1/2 tsp ground nutmeg
1 cup caramel drops
1 medium apple, peeled & finely diced
method:
Using a mixer, combine sugars and butter until creamy.
Add the egg, flour, spices, baking powder, salt, and vanilla.
Switching to mixing with a spoon, add 3/4 caramel drops and apple.
Place in fridge for 30min.
Meanwhile heat oven to 180°C. Line tray with baking sheet.
Shape 1 tbsp of dough into a ball, and set on the tray. Dough should make around 15. Set them 5cm apart from each other because once in the oven they will flatten.
Bake 15min.
* Optional: use only 3/4 out of the caramel drops in the cookie dough. Then, once they are removed from the oven and resting on a wire rack, gently press the remaining 1/4 caramel drops into the cookies.
