ingredients:
(makes 12 muffins)
100g butter, melted
2 eggs
100ml milk
150ml cream
300g flour
1 tbsp baking powder
40g caster sugar
40g brown sugar, plus 6 tsp for sprinkling on top
1/2 tsp salt
2 tsp cinnamon
1/4 tsp ground clove
150g caramel drops (or salted caramel drops)
1 apple, peeled, cored and finely diced (ca. 1 cup)
method:
Preheat oven to 180°C.
Whisk eggs until well-beaten. Add milk and cream, and mix to combine.
Using a spoon (or a mixer), mix in the flour and baking powder.
Poor in the melted butter and mix.
Add the sugars, salt and all the spices. Add the caramel and apple.
Spoon into a muffin tray lined with paper liners. Sprinkle generously with brown sugar and bake 30 min.
Cool on a wire rack.
