ingredients:
(serves 4)
200g ear shaped pasta or other
200g rocket
200g cottage cheese
10tbsp almonds, chopped
4 tbsp pomegranate seeds
For the dressing:
1 tsp mild mustard
2 tsp green pesto of choice
2 tsp maple syrup
salt, pepper
3-4 tbsp olive oil
juice from 1/2 lemon

method:
Cook pasta according to packet instructions. Drain, and set aside to cool.
Combine rocket, pasta, cottage cheese, and almonds in a salad bowl.
Combine dressing ingredients, and season with salt and pepper to taste. Pour over the salad and toss to coat.
Sprinkle pomegranate seeds on top.
