egg fried rice with prawns

ingredients:

(serves 4)

  • 250g basmati rice (1.25 cups)

  • 1 onion, finely chopped

  • 1/6 cup soy sauce

  • 1/2 tsp garlic powder

  • 1/2 tsp cayenne

  • 100g frozen peas (1.25 cups)

  • 250g pre-cooked prawns

  • 130 - 150g canned pineapple, chopped

  • 2 eggs, whisked


method:

Cook rice in 2.5 cups water with 1/2 tsp salt, covered and on low heat, for 10 min.

In a large pan, fry the onion until translucent. Add the rice, soy sauce, garlic and cayenne. Stir in the peas, prawns and pineapple.

Move the contents to one side of the pan, and scramble the eggs in the other, before combining everything together. Season with a little salt.
