greek-polish salad

ingredients:

(serves 4)

  • 1 lettuce or 2 mini romaine, torn

  • 500g potatoes, diced

  • 1 cucumber, diced

  • 150g feta, diced

  • 100g cherry tomatoes, halved

  • 1 small onion, chopped

  • 1 tbsp chopped fresh parsley

  • 2 hard-boiled eggs, quartered

  • 5 olives

  • 1 tsp dried oregano

  • salt, pepper, olive oil


method:

Boil potatoes for 15 min. Allow to cool.

Combine onion, tomatoes, feta, cucumber and lettuce in a large salad bowl. Season with oregano, salt and pepper. Add the olives, potatoes and parsley, drizzle with olive oil and mix again. Lastly add the eggs and carefully give the salad one last toss.
