ingredients:

1 cup lentils
3 cups water
1 tbsp vegetable stock powder
2-3 carrots, diced
4 potatoes, diced
1 onion, chopped
1/2 cup tomato sauce
salt, pepper
1 laurel leaf
2 tbsp olive oil or 1 tbsp butter
Optional: feta cheese, ca. 150g
method:
Heat water in a soup pot and add vegetable stock powder. Add potatoes, carrots, onions, lentils, laurel leaf, and simmer, covered, 20 min.
Add tomato sauce and if soup is too thick then add 1 more cup water. Simmer, covered, 5 min.
Remove from heat and discard the laurel leaf. Season to taste with salt and pepper, and add olive oil/ butter.
