runner beans with roasted peanuts

ingredients:

(serves 2)

  • 400g frozen runner beans

  • 1 tbsp chopped chives

  • 1 small piece of ginger (ca. 1cm cube), grated

  • 1 garlic clove, grated

  • 1/4 tsp ground coriander

  • 4 tbsp roasted salted peanuts

  • 1/2 tsp lime zest

  • 5 tsp lime juice

  • 1/4 tsp sugar

  • olive oil, salt, pepper

  • 1 tbsp chopped fresh coriander

method:

Cook runner beans in salted water, ca. 5 min. Drain and set aside.

In a small jar, combine lime zest and juice, sugar, 1/2 tsp salt, 1/8 tsp pepper, and 4 tsp olive oil. Shake well and set aside.

Heat a little oil in a non-stick pot or pan, and simmer the chives, ginger, garlic, ground coriander, and peanuts.

Once aromatic, remove from heat. Add the runner beans, and mix well.

Pour lime dressing over the runner beans, add the fresh coriander and mix well. Season to taste in case more salt or pepper is needed.
