Prep: 10min | Cooking: 25min
Complexity: 2/5

ingredients:
(serves 4)
400g sausages, chopped (suggest Bratwust or minis)
2 large onions, chopped
2 garlic cloves, minced
1 can chopped tomatoes or sauce, 400g
olive oil, salt, pepper, pinch of sugar
500g kritharaki
1/2 cup fresh basil and parsley, chopped
1/2 cup white wine
method:
Fry onion in a little oil in a large pot. Once soft, add garlic. Extinguish with wine.
Add 4 cups water and the tomato sauce. Season with salt, pepper and sugar.
Once simmering, add the kritharaki. Allow it to simmer with the lid on for 15-20 min, mixing every few minutes. Depending on how much water the kritharaki absorbs before it softens, you may need to add 1-2 more cups.
Fry sausages in a pan. Once crisp, add them to the kritharaki.
Mix in the fresh herbs, and season to taste with salt and pepper.
