400g beef loin
Dry rub:
1 tbsp brown sugar
1/2 tbsp paprika
1.5 tsp salt
1 tsp pepper
1/4 tsp cayenne pepper
1/2 tsp garlic powder
1/4 tsp ground coriander
1/4 tsp ground cumin
Salad:
2 ears of corn, shucked
200g cherry tomatoes, halved
1 tsp chopped chives
2 tbsp chopped fresh coriander
juice from 1/4 lime
salt, pepper, olive oil
method:
Grill corn until it starts to brown, 8-10 min.
Meanwhile, place remaining salad ingredients in a bowl, and add corn. Season to taste, set aside.
Combine dry rub ingredients. Coat loin in olive oil and then the dry rub. Fry on high heat for 2-3 min on each side, and then lower heat to medium-high and cook to desired doneness.
